I have an insatiable craving for anything fresh and light now that the weather turns warmer and sunnier. Grilled seafood with salad replaces my normal crab lunch and swaps my usual creamy chocolate dessert with fruit bowl with sorbet or a fruit based cake. I’ve been craving for a lemon meringue pie of late but since it’s still too intimidating for me to try, this mascarpone lemon cake is a fantastic substitute. My husband made a deliciously hearty roasted leg of lamb this weekend and I balanced it out with this light cake to avoid falling into a food-induced coma.
