Kale is a rare commodity in Doha that when you see some in the supermarket, you buy right away and figure out what to do with them later on. That was the case last weekend when trying to figure out a kale recipe other than kale chips. Since it was my ‘carb’ day, I naturally went with a pasta dish. Enter creamy sweet potato pasta with crunchy kale. This dish uses sweet potato as a sauce instead of heavy cream and whole-wheat pasta instead of regular pasta. There’s a hint of sweetness with the sweet potato balanced with the crunchiness of kale. I made extra batch of roasted kale to eat as chips obviously (they’re addictive) but I think this pasta recipe will become my ‘when I spot kale in the supermarket’ recipe.
