When it comes to desserts, an old-fashioned chocolate chip cookie is more appealing to me more than cakes or cupcakes. It’s an ideal accompaniment to take out coffee and perfect afternoon or late-night snack. The problem though is I can never just have one. So in effort to control my sugar intake, I started looking for healthy alternatives to my sugary treats since I have no intention of going cold turkey any time soon. Enter Karlie Kloss cookies recipe that is gluten and sugar-free. There’s no butter, sugar, or eggs- 3 essential ingredients to making any dessert! I decided to test drive it and was pleasantly surprised by how delicious it came out.
First let me highlight that this is a one-bowl type of recipe. You literally measure and combine all the ingredients (dry ingredients first) and then bake for 6 minutes. My one tip is to carefully mold the dough in the baking sheet since it doesn’t hold it shape for long. The oats and toasted almonds gave it the right amount of crunch and the dark chocolate chips were enough to make it sweet. I can see myself baking this when I’m craving a cookie treat since it takes 10 minutes to make and yields fantastic results.
For those living in Doha, you can find most of the ingredients in Mega Mart such as rolled oats, xamtham gum and agave syrup. Almond flour is available in Carrefour, Lulu or Mega Mart.
